The brainchild of Noel James

Noel is one of the first brewers to burst onto the Bristol beer landscape with his very own microbrewery - ‘New Bristol Brewery'. He has spent the last five years picking up trophies for his beer, receiving critical acclaim about his stout and proving to the most skeptical of beer nerds that commercial brewing really can result in great beer.

He now runs New Bristol Brewery and Bristol Brewery School with his partner, brother and a team of beer loving geeks, providing beer to the many fine watering holes of Bristol and beyond and offloading his beer making skills to the many beer enthusiasts who flock to the school.

Noel has remained firmly ensconced as one of Bristol’s original master brewers – and prefers to feel part of the process rather than just overseeing it. He uses the words ‘hands-on’ on the brewery logo – this is not some meaningless corporate strap line, Noel insists on mashing in by hand to get a fuller flavour and is one of the only breweries in Bristol to still follow through this tradition from start to finish.

Working with only the finest malt and freshest ingredients – it’s no surprise that Noel is a bit of beer legend and that enthusiasts alike want to watch him work, learn his skills and of course drink his mighty fine beer.

After being weaned on Hooky Bitter from a young age, Jonny’s first attempt at brewing was a ginger ale as an impoverished student. Bolstered by the success of its drinkability, he produced a succession of top quality fruit wines to muted applause.

Fast forward a few years and a biochemistry degree later, he decided to spend a few months travelling the west coast of the USA in search of the perfect tipple. It was indeed a good trip and the beers left their mark, so much so that on return he took up a job in a real ale pub and signed up to a Masters Degree in Brewing Distilling at Heriot Watt University.
While finishing the degree, Jonny was offered a job at Bristol Beer Factory where he spent five years, including three as head of brewing – technical. During this time he fell in love with Belgian beers, making 6-monthly pilgrimages to breweries, blenders, monasteries and festivals alike.

He further honed his recipe skills as Head Brewer for Tiley’s Brewery at the Salutation Inn, before going on to co-found Mills Brewing in South Gloucestershire – the only brewery in the UK producing solely wild fermented beers.

Jonny’s love of beer, understanding of brewing science, experience in breweries of varying size and his passion for sharing knowledge ideally qualify him to tutor the wide range of courses on offer at Bristol Brewery School.

Tom has been working side by side with his brother Noel since the birth of New Bristol Brewery five years ago. He now oversees everything to do with the school – have any questions and he’s your man!

Assistant Brewer and good all-rounder

Robins passion for brewing started in his kitchen – spending many an hour brewing up his grandfathers old recipes on his make-shift equipment. His passion for all things craft saw him working behind the many ‘craft ale’ bars in Bristol before making the leap into the world of brewing at Left Handed Giant. He joined New Bristol Brewery in the spring of 2017 as Assistant Brewer.
